What’s Special About This Recipe

My recipe for a restorative almond milk is made with just pulverized almonds, water, dates, and Mexican vanilla. Unlike store-bought almond milk, there are no age-promoting phosphates, TMAO-producing lecithin, and uses dates to naturally flavor and boost magnesium and phytonutrient content.

The Mighty Date

Dates are packed with antioxidants. In fact, dates contain the highest amount of antioxidants of any fruit due to being grown in and having to tolerate harsh desert climates.

Making Nut Milk

If you’ve ever made nut milk, it can be a laborious process. It’s definitely not something you can make and drink on the spot.

Making nut milk from scratch requires soaking the nuts overnight, draining and rinsing the soaked nuts, blending the nuts in fresh water, and straining the nut milk. But here’s a shortcut using finely pulverized almonds, a.k.a. almond flour!

What’s In It

  • 1/2 cup organic almond flour

NOTE: The skins of almonds are rich in antioxidant polyphenols and prebiotic fiber.

  • 2 cups water (purified preferred)
  • 2 Medjool dates, quartered (I soak the dates in hot water for a few minutes to soften.)
  • 1/2 teaspoon vanilla – I prefer Blue Cattle Truck Trading Company’s Mexican vanilla, which is pure vanilla extracted from high quality vanilla beans and is not a synthetic flavoring that may not contain any vanilla at all. Mexican vanilla beans have a reputation for being the best vanilla beans in the world.

Directions

  • Toss all ingredients in a blender and blend until smooth.
